  • 1 large egg
  • 1/2 cup whole milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup hot brewed coffee or hot water
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup unsalted butter softened
  • 3 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup heavy cream or milk
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 1/3 cup melted dark chocolate
  • 2 tablespoons rainbow sprinkles
  • 2 tablespoons chocolate curls
  • 2 tablespoons mini chocolate chips

Instructions
 

  • 1. Preheat the oven to 350°F and line a muffin pan with cupcake liners
  • 2. Whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt
  • 3. Whisk the egg, milk, vegetable oil, and vanilla extract in a separate bowl
  • 4. Combine the wet and dry ingredients gently
  • 5. Slowly add the hot coffee or hot water and fold in the chocolate chips
  • 6. Fill the cupcake liners about two-thirds full
  • 7. Bake for 18 to 22 minutes until a toothpick comes out with moist crumbs
  • 8. Cool the cupcakes completely on a wire rack
  • 9. Beat the butter until creamy for the frosting
  • 10. Add powdered sugar and cocoa powder gradually
  • 11. Mix in vanilla extract, salt, melted chocolate, and heavy cream until fluffy
  • 12. Pipe frosting onto cooled cupcakes
  • 13. Decorate with sprinkles or chocolate curls before serving

Notes

Use room-temperature ingredients for the best cupcake texture
Do not overmix the batter to keep the cupcakes soft and fluffy
