Ingredients
  

  • 2 cups green papaya shredded
  • 1 cup carrots shredded
  • 2 cloves garlic
  • 2 –3 red chilies
  • 2 tbsp lime juice
  • 1 ½ tbsp fish sauce
  • 1 tbsp palm sugar
  • 1 cup cherry tomatoes halved
  • ½ cup long green beans cut
  • 2 tbsp crushed peanuts
  • 2 tbsp fresh cilantro chopped
  • 1 tbsp dried shrimp optional

Instructions
 

  • 1. Peel and shred the green papaya and carrots into thin strips. Prepare the green beans and halve the cherry tomatoes.
  • 2. Pound garlic and chilies into a coarse paste using a mortar and pestle.
  • 3. Add palm sugar and mash until partially dissolved.
  • 4. Mix in lime juice and fish sauce to form the dressing.
  • 5. Add papaya, carrots, green beans, and tomatoes.
  • 6. Gently pound and toss to combine while keeping texture crisp.
  • 7. Add dried shrimp if using and mix well.
  • 8. Transfer to a plate and garnish with peanuts and cilantro.
  • 9. Taste and adjust seasoning before serving.

Notes

Use a mortar and pestle for authentic flavor.
Adjust chili quantity to control spice level.
