- 3 cups cooked rice
- 1 tablespoon olive oil
- 1 small onion diced
- 1 red bell pepper diced
- 2 cloves garlic minced
- 1 jalapeño diced
- 1 packet taco seasoning
- 1 cup salsa
- 1 can black beans drained and rinsed
- 1 cup corn kernels
- 1/2 cup sour cream
- 2 cups shredded Mexican cheese blend
- 1/2 cup sliced black olives
- 1/4 cup chopped cilantro
- 2 green onions sliced
- 1 cup crushed tortilla chips
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
1. Preheat the oven to 375°F and lightly grease a large casserole dish.
2. Heat olive oil in a large skillet over medium heat. Add the onion and bell pepper, cooking until softened.
