  • 2 3/4 cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract
  • 2 tablespoons milk
  • 1/2 cup unsalted butter softened
  • 3 cups powdered sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • Food coloring as desired
  • Rainbow sprinkles for topping

Instructions
 

  • 1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  • 2. In a large bowl, beat the butter and sugar together until light and fluffy.
  • 3. Add the egg, egg yolk, vanilla extract, almond extract, and milk. Mix until smooth.
  • 4. In another bowl, whisk together the flour, cornstarch, baking powder, and salt.
  • 5. Gradually combine the dry ingredients with the wet ingredients until a soft dough forms.
  • 6. Scoop the dough onto the prepared baking sheets and gently flatten each cookie slightly.
  • 7. Bake for 9 to 11 minutes until the edges are lightly set but the centers remain soft.
  • 8. Allow the cookies to cool on the baking sheet for several minutes before transferring to a wire rack.
  • 9. To make the frosting, beat the butter until creamy, then slowly mix in powdered sugar, milk, and vanilla extract.
  • 10. Add food coloring and continue mixing until fluffy and smooth.
  • 11. Spread frosting over completely cooled cookies.
  • 12. Top with rainbow sprinkles immediately after frosting.
  • 13. Allow frosting to set before serving or storing.

Notes

Use room-temperature butter for the softest cookie texture and smooth frosting consistency.
Do not overbake the cookies. The centers should still look slightly soft when removed from the oven.
Allow the cookies to cool completely before frosting to prevent the frosting from melting.
