Ingredients
  

  • 4 low-calorie flour tortillas
  • 1 pound lean ground beef
  • 1 cup reduced-fat cheddar cheese shredded
  • 1/2 cup reduced-fat mozzarella cheese shredded
  • 1/2 cup diced onion
  • 2 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup chopped pickles
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray as needed
  • 1/2 cup diced tomatoes
  • 2 tablespoons chopped fresh cilantro
  • 1/4 cup plain Greek yogurt or light sour cream

Instructions
 

  • 1. Heat a large nonstick skillet over medium heat and coat lightly with cooking spray.
  • 2. Add the lean ground beef and diced onion to the skillet. Cook until the beef is browned and the onions are soft.
  • 3. Stir in the garlic, tomato paste, mustard, Worcestershire sauce, paprika, salt, and black pepper.
  • 4. Cook the mixture for 2 to 3 more minutes until thickened and flavorful.
  • 5. Remove the skillet from the heat and stir in the chopped pickles.
  • 6. Lay the tortillas flat and sprinkle cheddar and mozzarella cheese over half of each tortilla.
  • 7. Spoon the cheeseburger filling evenly over the cheese.
  • 8. Add a little more cheese on top of the filling and fold the tortillas in half.
  • 9. Heat a clean skillet over medium heat and lightly spray with cooking spray.
  • 10. Cook each quesadilla for 2 to 4 minutes per side until golden brown and crispy.
  • 11. Transfer the quesadillas to a cutting board and let them rest briefly before slicing.
  • 12. Garnish with diced tomatoes, chopped cilantro, and serve with Greek yogurt or light sour cream.

Notes

Use freshly shredded cheese for smoother melting and better texture.
Avoid overfilling the tortillas to make flipping easier and keep the quesadillas crispy.
Reheat leftovers in a skillet or air fryer instead of the microwave for the best crunch.
