Ingredients
  

  • 14 oz extra-firm tofu
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon soy sauce
  • 1 teaspoon maple syrup

Instructions
 

  • 1. Press tofu for 20–30 minutes to remove excess moisture, then cut into 1-inch cubes.
  • 2. Mix olive oil, lemon juice, lemon zest, garlic, oregano, thyme, paprika, salt, and pepper in a bowl.
  • 3. Add tofu cubes and toss gently to coat.
  • 4. Marinate for at least 20 minutes or up to 2 hours.
  • 5. Preheat oven to 400°F (200°C) and line a baking sheet.
  • 6. Arrange tofu in a single layer.
  • 7. Bake for 20 minutes, flip, then bake another 10–15 minutes.
  • 8. Remove, garnish with parsley, and serve warm.

Notes

Press tofu well for best results.
Do not overcrowd the pan.
Broil briefly for extra crispiness.
