Ingredients

  • 1 sheet puff pastry thawed
  • 1 pound pork sausage
  • 2 large yellow onions thinly sliced
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 1 cup Gruyère cheese shredded
  • 1 teaspoon fresh thyme
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg beaten
  • 1 tablespoon flour for dusting

Instructions

  • 1. Heat butter in a skillet over medium-low heat and cook the sliced onions slowly until deeply caramelized and golden brown, about 25 to 35 minutes. Add garlic and thyme during the final few minutes of cooking.
  • 2. Allow the onion mixture to cool slightly, then combine it with sausage, Gruyère cheese, Dijon mustard, Worcestershire sauce, salt, and black pepper in a mixing bowl.
  • 3. Lightly flour a clean surface and roll out the puff pastry sheet gently to smooth the seams.
  • 4. Cut the pastry into rectangles and spoon the sausage filling along one side of each piece.
  • 5. Fold the pastry over the filling and press the edges firmly to seal. Place the sausage rolls seam-side down on a parchment-lined baking tray.
  • 6. Brush the tops generously with beaten egg for a glossy golden finish.
  • 7. Refrigerate the prepared sausage rolls for 15 to 20 minutes before baking.
  • 8. Preheat the oven to 400°F and bake for 25 to 35 minutes until the pastry is puffed and golden brown and the filling is fully cooked.
  • 9. Allow the sausage rolls to rest for several minutes before serving warm.

Notes

Cook the onions slowly over low heat for the best sweet caramelized flavor without burning them.
Keep the puff pastry cold while assembling to ensure flaky layers after baking.
Let the sausage rolls rest for several minutes after baking so the filling stays juicy and the pastry remains crisp.
