  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 ripe bananas mashed
  • 3/4 cup brown sugar
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 1/2 cup chopped nuts or chocolate chips optional

Instructions
 

  • 1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  • 2. Mash the ripe bananas in a large bowl until mostly smooth.
  • 3. Add melted butter and mix well.
  • 4. Stir in brown sugar until fully combined.
  • 5. Add eggs one at a time, mixing well after each addition.
  • 6. Stir in vanilla extract and milk.
  • 7. In a separate bowl, whisk together flour, baking soda, and salt.
  • 8. Gradually combine dry ingredients with wet ingredients, mixing gently.
  • 9. Fold in nuts or chocolate chips if using.
  • 10. Fill muffin cups about 3/4 full.
  • 11. Bake for 18–22 minutes or until a toothpick comes out clean.
  • 12. Cool for 5 minutes, then transfer to a wire rack.

Notes

Use very ripe bananas for the best sweetness and texture.
Do not overmix the batter to keep muffins soft and fluffy.
Sprinkle extra brown sugar on top before baking for a crunchy finish.
