Ingredients

  • 1 lb ground beef
  • 2 large yellow onions thinly sliced
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tsp balsamic vinegar
  • 1/2 tsp dried thyme
  • 4 slices provolone or Gruyère cheese
  • 4 brioche or potato buns
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • 1. Melt butter in a large skillet over medium-low heat. Add sliced onions and cook for 25–30 minutes, stirring often, until deeply caramelized.
  • 2. Stir in minced garlic and cook for 1 minute until fragrant.
  • 3. Add ground beef, breaking it up as it browns. Cook until fully cooked and no pink remains.
  • 4. Pour in beef broth, Worcestershire sauce, balsamic vinegar, and thyme. Stir and let simmer for 10 minutes until slightly thickened.
  • 5. Butter and toast the buns in a separate skillet or broiler until golden.
  • 6. Spoon beef mixture onto buns and top with cheese slices.
  • 7. Broil or heat until the cheese melts.
  • 8. Serve hot, optionally garnished with fresh parsley.

Notes

Be patient when caramelizing the onions—this step builds the foundation of flavor.
Toasting the buns keeps them from getting soggy under the juicy filling.
Don’t skip the broth and balsamic—they enhance the savory depth of the meat mixture.
