  • 4 cups sweet corn kernels
  • 2 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 2 tablespoons cream cheese softened
  • 1 tablespoon granulated sugar
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon chopped fresh parsley

Instructions
 

  • 1. Prepare the corn by thawing frozen corn or draining canned corn thoroughly.
  • 2. Melt the butter in a medium saucepan over medium heat.
  • 3. Whisk the flour into the butter and cook for 1 minute.
  • 4. Slowly pour in the milk while whisking continuously until smooth.
  • 5. Add the heavy cream and softened cream cheese and stir until melted.
  • 6. Stir in the corn kernels, sugar, salt, black pepper, and garlic powder.
  • 7. Simmer the mixture for 10 to 15 minutes while stirring occasionally.
  • 8. Lightly mash a portion of the corn for a creamier texture if desired.
  • 9. Stir in parmesan cheese until fully melted.
  • 10. Remove from heat and let rest for 2 minutes before serving.
  • 11. Garnish with chopped parsley and serve warm.
