Ingredients

  • 2 cups shredded rotisserie chicken
  • 2 cups frozen mixed vegetables
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup chicken broth
  • 1 package Red Lobster Cheddar Bay Biscuit Mix
  • 2/3 cup milk
  • 1/4 cup melted butter
  • 1/2 cup shredded cheddar cheese optional
  • 1/2 teaspoon garlic powder optional
  • 1 teaspoon dried parsley flakes optional

Instructions

  • 1. Preheat oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  • 2. In a large bowl, combine chicken, frozen vegetables, cream of chicken soup, and chicken broth. Mix well and pour into prepared dish.
  • 3. In a separate bowl, whisk together biscuit mix, milk, melted butter, and the seasoning packet. Add cheese, garlic powder, and parsley if using.
  • 4. Spoon biscuit batter evenly over the chicken mixture. No need to spread—batter will spread during baking.
  • 5. Bake for 35 to 40 minutes until golden brown and bubbly. Broil for 2-3 minutes at the end for a crispier top if desired.
  • 6. Let rest for 5-10 minutes before serving to allow filling to set.

Notes

Let the casserole rest before serving to avoid a soupy consistency.
Add cheese to the biscuit mix for extra richness.
Use rotisserie chicken to save time and add more flavor.
