Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter melted
  • 1/4 cup granulated sugar
  • 16 ounces cream cheese softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/3 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1/3 cup rainbow sprinkles jimmies
  • 2 tablespoons heavy cream optional

Instructions
 

  • 1. Preheat oven to 325°F (160°C) and line an 8x8-inch pan with parchment paper
  • 2. Mix graham cracker crumbs, melted butter, and sugar until combined
  • 3. Press mixture firmly into the pan and chill or pre-bake
  • 4. Beat cream cheese until smooth
  • 5. Add sugar and mix well
  • 6. Add eggs one at a time and mix gently
  • 7. Blend in sour cream, vanilla, and flour
  • 8. Fold in sprinkles
  • 9. Pour filling over crust
  • 10. Bake for 30–40 minutes
  • 11. Cool gradually in oven
  • 12. Chill for at least 4 hours
  • 13. Slice and serve

Notes

Use room temperature cream cheese for best texture
Do not overmix after adding eggs
Chill completely before slicing for clean cuts
