Ingredients
  

  • 2 tablespoons olive oil or unsalted butter
  • 1 medium yellow onion finely chopped
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 2 cans 14 oz each whole peeled tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon sugar optional
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese optional
  • Fresh basil leaves for garnish

Instructions
 

  • 1. Heat olive oil or butter in a large pot over medium heat and cook onion until soft
  • 2. Add garlic and cook until fragrant
  • 3. Stir in tomato paste and cook briefly
  • 4. Add tomatoes and broth and mix well
  • 5. Season with salt pepper sugar basil and oregano
  • 6. Simmer for 20 to 25 minutes
  • 7. Blend until smooth
  • 8. Return to heat and stir in cream and cheese
  • 9. Adjust seasoning to taste
  • 10. Serve hot with garnish

Notes

Use high-quality canned tomatoes for best flavor
Blend carefully while soup is hot
Add cream on low heat to avoid curdling
