  • 2 cups cooked chicken breast or thighs shredded or cubed

  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 cup carrots diced
  • 1 cup peas
  • 1 cup mushrooms sliced
  • 1/2 cup celery chopped
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk or heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon parsley
  • 1/2 teaspoon paprika

Instructions
 

  • 1. Prepare all ingredients by chopping vegetables and cutting chicken into bite-sized pieces.
  • 2. Cook chicken in a skillet until golden and fully cooked, then set aside.
  • 3. Sauté onion and garlic until fragrant.
  • 4. Add vegetables and cook until slightly tender.
  • 5. Make a roux with butter and flour.
  • 6. Slowly whisk in chicken broth, then add milk or cream.
  • 7. Stir until thickened and smooth.
  • 8. Return chicken to the pan and mix well.
  • 9. Add cheese and seasonings.
  • 10. Simmer until creamy and fully combined.

Notes

Use rotisserie chicken for faster preparation.
Simmer sauce long enough for best texture.
