Ingredients
  

  • 2 boxes 3 oz each flavored gelatin (red and green)
  • 2 cups boiling water
  • 2 cups mini marshmallows
  • 1 cup sweetened condensed milk
  • 2 cups shredded coconut
  • 1/2 teaspoon vanilla extract optional
  • few drops food coloring optional

Instructions
 

  • 1. In separate bowls, dissolve each gelatin flavor in boiling water
  • 2. Add mini marshmallows and stir until melted
  • 3. Mix in sweetened condensed milk and vanilla extract
  • 4. Enhance color with food coloring if desired
  • 5. Chill mixture until partially set
  • 6. Roll into small balls using your hands
  • 7. Coat each ball in shredded coconut
  • 8. Refrigerate again until firm
  • 9. Serve chilled

Notes

Use finely shredded coconut for best texture
Lightly grease hands to prevent sticking
Avoid over-chilling before shaping
