Ingredients
  

  • 8 ounces rice noodles
  • 2 tablespoons vegetable oil
  • 1 pound chicken breast thinly sliced
  • 3 cloves garlic minced
  • 2 large eggs
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • 4 green onions sliced
  • 1/4 cup soy sauce
  • 2 tablespoons fish sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons lime juice
  • 2 tablespoons peanut butter
  • 1 tablespoon chili sauce
  • 1/3 cup crushed peanuts
  • 2 tablespoons chopped cilantro
  • 1 lime cut into wedges

Instructions
 

  • 1. Soak the rice noodles in warm water according to package instructions until slightly softened, then drain and set aside.
  • 2. In a small bowl, whisk together soy sauce, fish sauce, brown sugar, lime juice, peanut butter, and chili sauce to make the Pad Thai sauce.
  • 3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  • 4. Add the sliced chicken and cook until fully cooked and lightly golden.
  • 5. Stir in the minced garlic and cook briefly until fragrant.
  • 6. Add shredded carrots and cook for 2 minutes while stirring frequently.
  • 7. Push the ingredients to one side of the skillet and scramble the eggs on the empty side until just set.
  • 8. Add the soaked rice noodles, bean sprouts, and green onions to the skillet.
  • 9. Pour the prepared sauce over the noodles and toss everything together until evenly coated and heated through.
  • 10. Remove from heat and top with crushed peanuts and chopped cilantro.
  • 11. Serve immediately with fresh lime wedges on the side.

Notes

Use rice noodles that are slightly firm after soaking to prevent mushy texture during cooking.
Prepare all ingredients before heating the pan because stir-frying moves very quickly.
Add fresh lime juice right before serving for the brightest and freshest flavor.
