- 2 cups cooked white or brown rice
- 2 cups cooked chicken shredded or cubed
- 2 cups broccoli florets steamed or thawed
- 1 can 10.5 oz condensed cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 1/4 teaspoon paprika optional
- 1 tablespoon olive oil or melted butter
1. Preheat oven to 375°F (190°C) and grease a 9x13 inch casserole dish.
2. Lightly steam fresh broccoli or thaw and drain frozen broccoli.
3. In a large bowl combine rice chicken broccoli soup sour cream milk garlic powder onion powder salt and pepper.
4. Fold in shredded cheddar cheese and mix well.
5. Spread mixture evenly into the casserole dish.
6. Sprinkle extra cheese and paprika on top.
7. Cover with foil and bake 25 minutes.
8. Remove foil and bake another 10 to 15 minutes until golden and bubbly.
9. Let the casserole rest for 5 to 10 minutes before serving.
Day old rice works best because it absorbs the sauce without becoming mushy.
