Ingredients
  

  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 16 oz cream cheese room temperature
  • 1/2 cup sour cream
  • 2/3 cup powdered sugar
  • 1 tablespoon cornstarch
  • 1/4 cup heavy cream
  • 3/4 cup caramel sauce
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup crushed brownie crumbs

Instructions
 

  • 1. Preheat oven to 325°F (163°C) and line a 9-inch springform pan.
  • 2. Melt butter and mix with granulated sugar, brown sugar, eggs, and vanilla.
  • 3. Stir in flour, cocoa powder, and salt until just combined. Bake 20–25 minutes.
  • 4. Beat cream cheese until smooth then add sour cream, powdered sugar, cornstarch, and vanilla.
  • 5. Mix in heavy cream until smooth and creamy.
  • 6. Pour cheesecake filling over the cooled brownie base.
  • 7. Wrap pan with foil and place in water bath.
  • 8. Bake at 300°F (149°C) for 50–60 minutes until slightly jiggly.
  • 9. Turn oven off and cool with door slightly open for 30 minutes.
  • 10. Refrigerate at least 4 hours or overnight.
  • 11. Heat caramel sauce with chocolate chips until smooth.
  • 12. Pour topping over cheesecake and garnish with brownie crumbs.

Notes

Use room temperature cream cheese for a perfectly smooth cheesecake batter.
Allow the brownie layer to cool completely before adding cheesecake filling.
For the cleanest slices, chill the cheesecake overnight and cut with a warm knife.
