  • ¼ cup Biscoff cookie butter
  • 1 cup unsalted butter softened
  • 2 ½ cups powdered sugar sifted
  • ¾ cup Biscoff cookie butter
  • 1 to 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • pinch salt
  • crushed Biscoff cookies for garnish
  • extra Biscoff cookies optional

Instructions
 

  • 1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • 2. Whisk flour, baking powder, and salt in a bowl.
  • 3. Beat butter and sugar until light and fluffy.
  • 4. Add eggs one at a time, then mix in vanilla extract.
  • 5. Blend in Biscoff cookie butter until smooth.
  • 6. Alternate adding dry ingredients and milk, mixing gently.
  • 7. Fill cupcake liners two-thirds full.
  • 8. Bake for 18 to 22 minutes until a toothpick comes out clean.
  • 9. Cool completely on a wire rack.
  • 10. Beat butter for frosting until creamy.
  • 11. Gradually mix in powdered sugar.
  • 12. Add Biscoff cookie butter, vanilla, and cream; beat until fluffy.
  • 13. Pipe frosting onto cooled cupcakes.
