Ingredients

  • 1 lb chicken breast cut into bite-sized pieces
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 1 medium onion diced
  • 2 celery stalks diced
  • 1 bell pepper diced
  • 3 cloves garlic minced
  • 2 cups chicken broth
  • 1 cup diced tomatoes
  • 2 tsp Cajun seasoning
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 green onions chopped
  • 2 tbsp fresh parsley chopped
  • 3 cups cooked white rice

Instructions

  • 1. Cut the chicken into bite-sized pieces and prepare all vegetables by dicing and mincing as needed.
  • 2. In a large skillet, melt the butter over medium heat, then add flour and stir continuously to form a roux until it turns light brown.
  • 3. Add onion, celery, and bell pepper to the roux and cook until softened and fragrant.
  • 4. Stir in garlic, Cajun seasoning, paprika, and thyme, allowing the spices to bloom.
  • 5. Add the chicken pieces and cook until lightly browned on the outside.
  • 6. Slowly pour in the chicken broth while stirring to prevent lumps, then add diced tomatoes.
  • 7. Reduce heat and let the mixture simmer for 20–30 minutes until thickened and flavorful.
  • 8. Adjust seasoning as needed and remove from heat.
  • 9. Serve over cooked white rice and garnish with green onions and parsley.

Notes

Take your time with the roux to develop a deep, nutty flavor without burning it.
Add broth gradually while stirring to ensure a smooth, lump-free sauce.
Let the dish rest for a few minutes before serving to allow flavors to fully settle.
