1/2 cup hot brewed coffee or hot water

1/2 cup semi-sweet chocolate chips

1 cup unsalted butter softened

3 1/2 cups powdered sugar

1/2 cup unsweetened cocoa powder

1/4 cup heavy cream or milk

1 teaspoon vanilla extract

1 pinch salt

1/3 cup melted dark chocolate

2 tablespoons rainbow sprinkles

2 tablespoons chocolate curls

2 tablespoons mini chocolate chips


Instructions

1. Preheat the oven to 350°F and line a muffin pan with cupcake liners

2. Whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt

3. Whisk the egg, milk, vegetable oil, and vanilla extract in a separate bowl

4. Combine the wet and dry ingredients gently

5. Slowly add the hot coffee or hot water and fold in the chocolate chips

6. Fill the cupcake liners about two-thirds full

7. Bake for 18 to 22 minutes until a toothpick comes out with moist crumbs

8. Cool the cupcakes completely on a wire rack

9. Beat the butter until creamy for the frosting

10. Add powdered sugar and cocoa powder gradually

11. Mix in vanilla extract, salt, melted chocolate, and heavy cream until fluffy
