Ingredients

Scale

2 cups old-fashioned rolled oats

1 3/4 cups all-purpose flour

3/4 cup granulated sugar

1/2 cup brown sugar

1 cup unsalted butter, melted

1/2 teaspoon salt

1 teaspoon cinnamon

1 teaspoon vanilla extract

3 cups fresh strawberries, chopped

2 tablespoons cornstarch

1 tablespoon lemon juice

Instructions

1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.

2. In a large mixing bowl, combine the rolled oats, flour, granulated sugar, brown sugar, salt, and cinnamon.

3. Add the melted butter and vanilla extract, then mix until a crumbly texture forms.

4. Reserve about one-third of the oat mixture for the topping.

5. Press the remaining oat mixture firmly into the prepared baking pan to form the crust.

6. In another bowl, combine the chopped strawberries, cornstarch, and lemon juice. Stir gently until coated.

7. Spread the strawberry filling evenly over the crust layer.

8. Sprinkle the reserved oat crumble mixture evenly over the strawberries.

9. Bake for 35 to 45 minutes or until the topping becomes golden brown and the filling bubbles around the edges.

10. Remove from the oven and allow the bars to cool completely before slicing.

11. Cut into squares and serve warm, chilled, or at room temperature.

Notes

Use ripe strawberries for the best natural sweetness and flavor.

Allow the bars to cool completely before slicing to help the filling set properly.

For cleaner slices, refrigerate the bars for 30 minutes before cutting.
