Ingredients
2 large boneless skinless chicken breasts
1 cup heavy cream
1/2 cup grated parmesan cheese
1 cup chicken broth
3 cloves garlic, minced
1 cup fresh spinach
1/2 cup sun-dried tomatoes, sliced
1 tablespoon butter
1 teaspoon Italian seasoning
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon cornstarch
2 tablespoons water
2 tablespoons fresh basil, chopped
Instructions
1. Lightly grease the inside of the slow cooker with nonstick spray or oil.
2. Place the chicken breasts into the bottom of the slow cooker in a single layer.
3. Season the chicken with salt, black pepper, paprika, onion powder, and Italian seasoning.
4. Add the minced garlic, chicken broth, butter, and sun-dried tomatoes around the chicken.
5. Cover and cook on low for 4 to 6 hours or high for 2 to 3 hours until the chicken is tender and fully cooked.
6. About 30 minutes before serving, pour the heavy cream into the slow cooker and stir gently.
7. Add the parmesan cheese slowly while stirring until melted into the sauce.
8. Mix the cornstarch and water together in a small bowl, then stir the mixture into the sauce if a thicker consistency is desired.
9. Stir in the fresh spinach and continue cooking for 15 to 20 minutes until wilted.
10. Sprinkle fresh basil over the top before serving.
