Ingredients
2 large boneless skinless chicken breasts
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon Italian seasoning
2 tablespoons olive oil
3 tablespoons butter
5 garlic cloves minced
1 cup chicken broth
1/2 cup heavy cream
2 tablespoons chopped fresh parsley
2 pounds russet potatoes peeled and cubed
4 tablespoons butter for mashed potatoes
1/2 cup warm milk
1/3 cup grated parmesan cheese
1/2 teaspoon salt for potatoes
1/4 teaspoon black pepper for potatoes
Instructions
1. Place the peeled and cubed potatoes into a large pot and cover with salted water. Bring to a boil and cook until fork tender, about 15 to 20 minutes.
2. Drain the potatoes thoroughly and return them to the warm pot. Mash with butter, warm milk, parmesan cheese, salt, and black pepper until smooth and creamy. Cover to keep warm.
3. Pat the chicken breasts dry using paper towels. Season both sides with salt, black pepper, paprika, onion powder, and Italian seasoning.
4. Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 4 to 6 minutes per side until golden brown and fully cooked. Transfer the chicken to a plate.
5. Reduce the heat slightly and melt butter in the same skillet. Add minced garlic and cook for about 30 seconds until fragrant.
6. Pour in the chicken broth and scrape the bottom of the skillet to release the browned bits. Stir in the heavy cream and parsley, then simmer for several minutes until the sauce thickens slightly.
7. Return the chicken to the skillet and spoon the sauce over the top. Simmer for 2 to 3 minutes so the chicken absorbs the garlic herb flavor.
8. Serve the chicken over creamy mashed potatoes and drizzle generously with the warm garlic herb sauce. Garnish with extra parsley before serving.
Notes
Use warm milk when making mashed potatoes to keep them smooth and creamy.
Pat the chicken dry before seasoning so it develops a golden crust during searing.
Allow the sauce to simmer gently instead of boiling rapidly to maintain a silky texture.
