2 large boneless skinless chicken breasts

1 1/2 cups whole milk ricotta cheese

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cups marinara sauce

3 cloves garlic minced

1 large egg

2 tablespoons olive oil

1 tablespoon Italian seasoning

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes

2 tablespoons chopped fresh parsley

2 tablespoons chopped fresh basil


Instructions

1. Preheat the oven to 375°F and lightly grease a large baking dish with olive oil.

2. Pat the chicken breasts dry with paper towels and season both sides with salt, black pepper, onion powder, and Italian seasoning.

3. In a large mixing bowl, combine ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese, minced garlic, egg, parsley, and red pepper flakes until smooth and creamy.

4. Spread a thin layer of marinara sauce on the bottom of the prepared baking dish.

5. Arrange the seasoned chicken breasts in the dish and spoon the ricotta mixture evenly over each piece.

6. Pour the remaining marinara sauce around and partially over the chicken.

7. Sprinkle the remaining mozzarella cheese evenly across the top along with extra Parmesan if desired.

8. Bake uncovered for 30 to 40 minutes or until the chicken reaches an internal temperature of 165°F.

9. Broil for 2 to 3 minutes at the end if you want a more golden and bubbly cheese topping.

10. Remove from the oven and let the Ricotta Chicken rest for 5 to 10 minutes before serving.
