1 teaspoon baking powder

1/2 cup unsalted butter softened

3/4 cup creamy peanut butter

1/2 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup milk

1/2 cup unsalted butter softened for frosting

1 cup creamy peanut butter for frosting

3 cups powdered sugar

3 tablespoons heavy cream

1 teaspoon vanilla extract

6 mini peanut butter cups halved

Chocolate drizzle optional

Chopped peanuts optional


Instructions

1. Preheat the oven to 350°F and line a cupcake pan with paper liners.

2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.

3. Beat the butter and peanut butter together until smooth and creamy.

4. Add the granulated sugar and brown sugar and mix until fluffy.

5. Add the eggs one at a time followed by the vanilla extract.

6. Alternate adding the dry ingredients and milk until the batter is fully combined.

7. Fill the cupcake liners about two-thirds full with batter.

8. Bake for 18 to 22 minutes until a toothpick inserted into the center comes out clean.

9. Cool the cupcakes completely on a wire rack.

10. Prepare the frosting by beating butter and peanut butter until smooth.

11. Gradually add powdered sugar and heavy cream until fluffy.

12. Pipe frosting onto the cooled cupcakes.

13. Decorate with peanut butter cup pieces, chocolate drizzle, or chopped peanuts.


Notes

Use room temperature ingredients for the best cupcake texture.

Avoid overmixing the batter once the flour is added.
