  • 1 lb Italian sausage, casings removed

  • 4 garlic cloves, minced
  • 1 tsp red pepper flakes (optional)
  • 2 tbsp tomato paste
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish
  • Optional: chopped fresh parsley and extra Parmesan for serving

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add sausage and cook until browned, breaking it up with a spoon.
  2. Stir in garlic and red pepper flakes. Sauté 30 seconds, then add tomato paste and cook for 1-2 minutes.
  3. Pour in chicken broth and deglaze the pot. Add rigatoni pasta and bring to a gentle boil.
  4. Reduce heat to a simmer, cover, and cook for 12-14 minutes, stirring occasionally.
  5. Stir in heavy cream and Parmesan. Simmer uncovered for 2-3 more minutes until sauce thickens.
