1 pound ground beef

1 tablespoon olive oil

1 small onion, diced

1 green bell pepper, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can diced tomatoes, drained

1 small jalapeño, diced

1 can refrigerated biscuit dough

8 ounces cream cheese, softened

1 cup sour cream

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

2 tablespoons chopped parsley or cilantro

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Preheat the oven to 350°F and lightly grease a casserole dish or oven-safe skillet.

2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned while breaking it apart.

3. Add diced onion, bell pepper, and garlic to the skillet. Cook until vegetables soften.

4. Drain excess grease from the beef mixture.

5. Stir taco seasoning, diced tomatoes, and jalapeños into the beef mixture and simmer for several minutes.

6. In a separate bowl, mix softened cream cheese and sour cream until smooth.

7. Press refrigerated biscuit dough evenly into the bottom of the prepared baking dish.

8. Spread the beef mixture evenly over the biscuit layer.

9. Carefully spread the cream cheese mixture over the meat layer.

10. Sprinkle cheddar cheese and Monterey Jack cheese evenly over the top.

11. Bake for 30 to 40 minutes until the cheese is bubbly and golden brown and the biscuit layer is fully cooked.
