6 large Russet potatoes peeled and cubed

1/2 cup unsalted butter softened

1 cup sour cream

1/2 cup whole milk

8 oz cream cheese softened

2 cups shredded cheddar cheese divided

6 slices bacon cooked and crumbled

3 green onions chopped

2 cloves garlic minced

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika optional


Instructions

1. Peel and cube potatoes, then boil in salted water for 15–20 minutes until fork-tender.

2. Drain thoroughly and let excess moisture evaporate.

3. Mash potatoes until smooth and fluffy.
