1 can refried beans

8 large flour tortillas

3 cups shredded Mexican cheese blend

3 cups enchilada sauce

1 tablespoon chopped cilantro

1 cup sour cream

1 jalapeño, sliced

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Preheat the oven to 375°F and lightly grease a large baking dish or oven-safe skillet.

2. Heat olive oil in a large skillet over medium heat. Add diced onions and cook until softened and lightly golden.

3. Stir in the minced garlic and cook briefly until fragrant.

4. Add the ground beef and cook while breaking it apart until browned completely. Drain excess grease if needed.

5. Sprinkle taco seasoning over the beef and stir well to coat evenly.
