3/4 cup granulated sugar

1/4 cup vegetable oil

2 large eggs

2 teaspoons vanilla extract

1/2 cup buttermilk

1 teaspoon white vinegar

1 teaspoon green gel food coloring

8 ounces cream cheese, softened

1/2 cup unsalted butter, softened

3 cups powdered sugar

2 tablespoons heavy cream


Instructions

1. Preheat the oven to 350°F and line a muffin pan with cupcake liners.

2. Whisk flour, cocoa powder, baking soda, and salt in a bowl.

3. Beat butter and sugar until light and fluffy.

4. Add oil, eggs, and vanilla, then mix until smooth.

5. Stir together buttermilk, vinegar, and green food coloring.

6. Add dry ingredients and buttermilk mixture alternately to the batter.

7. Fill cupcake liners two-thirds full.

8. Bake for 18 to 22 minutes, or until a toothpick comes out clean.

9. Cool cupcakes completely before frosting.

10. Beat cream cheese and butter until smooth.

11. Add powdered sugar and heavy cream, then whip until fluffy.

12. Pipe or spread frosting over cooled cupcakes and serve.


Notes

Use gel food coloring for the brightest green color without thinning the batter.

Do not overmix after adding flour, or the cupcakes may become dense.
