Description

Ingredients

2 cups all-purpose flour

1/3 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1/2 cup heavy cream

1 large egg

1 teaspoon vanilla extract

3/4 cup blueberries

1/2 cup raspberries

1/2 cup blackberries

1 cup powdered sugar

2 tablespoons milk or heavy cream

1 teaspoon lemon juice

1/2 teaspoon vanilla extract


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.

3. Cut the cold butter into the flour mixture until coarse crumbs form.

4. Whisk together the heavy cream, egg, and vanilla extract in a separate bowl.

5. Combine the wet and dry ingredients gently until a dough forms.

6. Fold the mixed berries carefully into the dough.

7. Shape the dough into a thick round disc on a floured surface.

8. Cut the dough into 8 wedges and place them on the baking sheet.

9. Brush the tops lightly with cream.

10. Bake for 18 to 22 minutes until golden.

11. Cool the scones slightly on a wire rack.

12. Whisk together the glaze ingredients until smooth.

13. Drizzle the glaze over the warm scones.

14. Allow the glaze to set before serving.


Notes

Keep the butter very cold for flaky layers.

Avoid overmixing the dough to maintain a tender texture.

Use frozen berries directly from the freezer to reduce excess moisture.
