2 green plantains

1 lb shrimp peeled and deveined

4 cloves garlic minced

3 tbsp olive oil

2 tbsp butter

1/2 cup chicken broth

1/2 cup pork cracklings crushed

2 tbsp fresh parsley chopped

1 tbsp lime juice

1 tsp salt

1/2 tsp black pepper

1 tsp paprika


Instructions

1. Peel the green plantains and cut them into 1-inch thick slices.

2. Heat oil in a skillet and fry the plantain slices until golden and tender, about 5–7 minutes.

3. Remove the plantains and drain them on paper towels.

4. In a mortar and pestle, mash garlic with a pinch of salt.

5. Add crushed pork cracklings and mash together to combine flavors.

6. Add fried plantains and mash until chunky while gradually adding chicken broth.

7. Shape the mofongo into a dome using a bowl or mold.

8. Season shrimp with salt, pepper, and paprika.

9. Heat olive oil and butter in a skillet, then sauté garlic until fragrant.

10. Add shrimp and cook for 2–3 minutes per side until pink and opaque.

11. Stir in lime juice and parsley, coating shrimp in the sauce.

12. Serve shrimp over mofongo and drizzle with garlic butter sauce.


Notes

Use very green plantains for the best texture and authentic flavor.

Do not overcook the shrimp to keep them juicy and tender.

Add broth slowly while mashing to control the texture of the mofongo.
