Ingredients
2 pounds sirloin steak cut into bite-sized cubes
2 tablespoons olive oil
4 tablespoons unsalted butter
5 cloves garlic minced
1 medium onion thinly sliced
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon fresh parsley chopped
1 teaspoon fresh chives chopped
1 lemon cut into wedges
Instructions
1. Pat the steak cubes dry with paper towels and season with salt, pepper, smoked paprika, Italian seasoning, and crushed red pepper flakes.
2. Heat a large cast-iron skillet over medium-high heat and add olive oil.
3. Add the steak bites in a single layer and sear for 2 minutes without moving them.
4. Flip the steak bites and cook another 1 to 2 minutes until browned and cooked to your preferred doneness.
5. Remove the steak from the skillet and set aside temporarily.
6. Lower the heat slightly and melt 2 tablespoons butter in the skillet.
7. Add sliced onions and cook for 4 to 5 minutes until softened and lightly caramelized.
8. Stir in minced garlic and cook for 30 seconds until fragrant.
9. Add remaining butter, Worcestershire sauce, and soy sauce to the skillet and stir until combined.
10. Return the steak bites to the skillet and toss to coat in the garlic butter sauce.
11. Cook for 1 to 2 additional minutes until heated through.
12. Garnish with parsley, chives, and fresh lemon juice before serving.
Notes
Patting the steak dry before cooking helps create a rich golden-brown crust during searing.
Avoid overcrowding the skillet to prevent steaming and ensure proper caramelization.
Add the butter after searing the steak so it doesn’t burn over high heat.
