1 lb smoked sausage, sliced

1 lb baby potatoes, halved

2 cups broccoli florets

2 bell peppers, sliced

3 tbsp olive oil

3 cloves garlic, minced

1 tsp salt

1/2 tsp black pepper

1 tsp Italian seasoning

1/2 tsp paprika

1/4 cup parmesan cheese (optional)

2 tbsp fresh parsley, chopped (optional)


Instructions

1. Preheat oven to 400°F (200°C).

2. Wash and cut baby potatoes into halves or quarters.

3. Chop broccoli into florets and slice bell peppers.

4. Slice sausage into ½-inch rounds.

5. In a large bowl, combine all ingredients.

6. Drizzle with olive oil and add seasonings. Toss well.

7. Spread evenly on a sheet pan in a single layer.

8. Roast for 25–35 minutes, stirring halfway through.

9. Remove when potatoes are tender and sausage is browned.

10. Garnish with parmesan and parsley, then serve.
