Ingredients
16 oz cream cheese softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 tablespoon lemon zest
2 tablespoons lemon juice
1 1/2 cups heavy whipping cream
3 cups blueberries
1/3 cup granulated sugar
1 tablespoon lemon juice for blueberries
1 teaspoon cornstarch optional
2 tablespoons water
4 cups pound cake cubes
1 cup whipped cream for topping
1/2 cup fresh blueberries for garnish
1 tablespoon lemon zest strips
Instructions
1. Prepare the blueberry layer by cooking blueberries, sugar, and lemon juice until juicy then cool completely
2. Beat cream cheese until smooth then mix in sugar vanilla lemon zest and juice
3. Whip heavy cream to stiff peaks then fold into cheesecake mixture
4. Cut cake into cubes
5. Layer cake at the bottom of dish
6. Add blueberry layer
7. Spread cheesecake filling
8. Repeat layers and finish with cream layer
9. Top with whipped cream blueberries and lemon zest
10. Chill for 2 to 4 hours before serving
