Ingredients
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
3/4 cup granulated sugar
1/2 cup brown sugar
1/2 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup buttermilk
1/2 cup hot coffee or hot water
1 cup unsalted butter softened
3 cups powdered sugar
2 tablespoons heavy cream or milk
1 teaspoon vanilla extract
1 pinch salt
2 tablespoons green and white sprinkles
Instructions
1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
2. Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl.
3. Beat the eggs, granulated sugar, and brown sugar until smooth in a separate bowl.
4. Add the vegetable oil and vanilla extract and mix well.
5. Stir in the buttermilk until combined.
6. Gradually mix the dry ingredients into the wet ingredients.
7. Slowly pour in the hot coffee or hot water and stir until smooth.
8. Fill cupcake liners about two-thirds full with batter.
9. Bake for 18 to 22 minutes or until a toothpick inserted in the center comes out clean.
10. Cool the cupcakes in the pan for 5 minutes before transferring to a cooling rack.
11. Beat the softened butter until creamy and fluffy.
12. Gradually add powdered sugar while mixing on low speed.
13. Add heavy cream, vanilla extract, and salt, then beat until smooth.
14. Transfer frosting to a piping bag and frost completely cooled cupcakes.
15. Decorate with green and white sprinkles before serving.
Notes
Do not overmix the batter after adding the flour because it can make the cupcakes dense instead of fluffy.
Allow the cupcakes to cool completely before frosting to prevent melting.
Use hot coffee instead of water for a deeper chocolate flavor.
