Description

Ingredients

1 1/2 cups graham cracker crumbs

6 tablespoons unsalted butter, melted

1/4 cup granulated sugar

16 ounces cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1/3 cup sour cream

1 teaspoon vanilla extract

1 tablespoon all-purpose flour

1/3 cup rainbow sprinkles (jimmies)

2 tablespoons heavy cream (optional)


Instructions

1. Preheat oven to 325°F (160°C) and line an 8×8-inch pan with parchment paper

2. Mix graham cracker crumbs, melted butter, and sugar until combined

3. Press mixture firmly into the pan and chill or pre-bake

4. Beat cream cheese until smooth

5. Add sugar and mix well

6. Add eggs one at a time and mix gently

7. Blend in sour cream, vanilla, and flour

8. Fold in sprinkles

9. Pour filling over crust

10. Bake for 30–40 minutes

11. Cool gradually in oven

12. Chill for at least 4 hours

13. Slice and serve


Notes

Use room temperature cream cheese for best texture

Do not overmix after adding eggs

Chill completely before slicing for clean cuts
