  • 1 lb thinly sliced ribeye steak
  • 1 tablespoon olive oil
  • 1 small onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced (optional)
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 1/2 teaspoon smoked paprika (optional)
  • 4 large flour tortillas (burrito-size)
  • 1 cup shredded provolone cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon butter (for grilling)

Optional Add-ins:

  • Sautéed mushrooms
  • Sliced jalapeños or banana peppers
  • Chopped parsley or cilantro

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add sliced onions and peppers; sauté until softened and lightly caramelized. Remove and set aside.
  2. In the same skillet, cook the ribeye steak. Season with garlic powder, salt, pepper, and paprika. Stir until beef is browned and cooked through.
  3. Return the sautéed vegetables to the skillet and mix with the beef. Remove from heat.
  4. Lay out tortillas. Sprinkle cheese on the bottom, add beef and veggie mix, then top with more cheese.
  5. Fold the tortillas burrito-style. Make sure they’re tightly wrapped.
  6. In a clean skillet, melt butter over medium heat. Place wraps seam-side down and grill for 2–3 minutes per side until golden and crispy.
  7. Slice in half and serve hot.
