Ingredients

2 tablespoons olive oil or unsalted butter

1 medium yellow onion finely chopped

3 cloves garlic minced

2 tablespoons tomato paste

2 cans (14 oz each) whole peeled tomatoes

1 cup vegetable broth

1 teaspoon sugar optional

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

1/2 cup heavy cream

1/4 cup grated Parmesan cheese optional

Fresh basil leaves for garnish


Instructions

1. Heat olive oil or butter in a large pot over medium heat and cook onion until soft

2. Add garlic and cook until fragrant

3. Stir in tomato paste and cook briefly

4. Add tomatoes and broth and mix well

5. Season with salt pepper sugar basil and oregano

6. Simmer for 20 to 25 minutes

7. Blend until smooth

8. Return to heat and stir in cream and cheese

9. Adjust seasoning to taste

10. Serve hot with garnish


Notes

Use high-quality canned tomatoes for best flavor

Blend carefully while soup is hot

Add cream on low heat to avoid curdling
