Ingredients

2 cups chicken cooked or raw diced or shredded
3/4 cup uncooked rice
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley chopped
Instructions
1. Chop all vegetables and prepare the chicken and rice before starting.
2. In a large pot melt butter over medium heat and sauté onion carrots and celery until softened.
3. Add garlic and cook briefly until fragrant.
4. Stir in flour and cook for 1 to 2 minutes to form a base.
5. Gradually pour in chicken broth while stirring to avoid lumps.
6. Add chicken and rice then bring to a gentle simmer.
7. Cook for 20 to 25 minutes stirring occasionally until rice is tender.
8. If using whole chicken pieces remove shred and return to the pot.
9. Stir in heavy cream and simmer on low for 5 minutes.
10. Season with salt and pepper garnish with parsley and serve warm.
Notes
For extra creaminess add a bit more cream or let the soup simmer longer uncovered.
