Ingredients

1 cup cottage cheese

1 cup fresh or frozen cranberries

1 tablespoon orange zest

1/4 cup orange juice

1 cup all-purpose flour

1/2 cup granulated sugar

2 large eggs

1/4 cup melted butter

1 teaspoon baking powder

1 teaspoon vanilla extract

1/4 teaspoon salt

2 tablespoons powdered sugar


Instructions

1. Preheat oven to 350°F and prepare baking dish

2. Mix cottage cheese eggs butter orange juice zest and vanilla

3. Combine flour sugar baking powder and salt

4. Mix dry ingredients into wet ingredients

5. Fold in cranberries

6. Transfer batter to baking dish

7. Bake for 35 to 45 minutes until golden

8. Cool for 10 to 15 minutes

9. Dust with powdered sugar and serve


Notes

Use room temperature ingredients for best texture

Drain excess liquid from cottage cheese if needed

Add extra orange zest for stronger citrus flavor
