Description

These cinnamon apple cookies are the perfect blend of a soft, buttery cookie base topped with warm, spiced apples and a rich caramel-like glaze. Ideal as a quick dessert, easy recipe, cozy snack, or even breakfast idea, they bring together apple pie flavors in a simple homemade cookie.


Ingredients

1 cup all-purpose flour

1/2 cup unsalted butter softened

1/4 cup granulated sugar

1/4 cup brown sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

2 medium apples peeled and diced

1 tablespoon lemon juice

1 teaspoon cornstarch

1/3 cup caramel sauce optional

1/4 cup chopped pecans or walnuts optional


Instructions

1. Peel, core, and dice the apples. Cook with sugar, cinnamon, and lemon juice until soft. Add cornstarch and thicken, then cool.

2. Cream butter, granulated sugar, and brown sugar until fluffy.

3. Add egg and vanilla extract and mix well.

4. Whisk flour, baking soda, salt, and cinnamon, then combine with wet mixture.

5. Chill dough for 30–45 minutes.

6. Preheat oven to 350°F (175°C) and prepare baking sheet.

7. Shape dough into balls and create wells in the center.

8. Bake for 8–10 minutes, then reshape wells if needed.

9. Fill centers with apple mixture and add nuts if desired.

10. Bake again for 8–10 minutes until golden.

11. Cool and drizzle with caramel sauce before serving.


Notes

Ensure apple filling is fully cooled before using.

Do not skip chilling the dough for best texture.
