500g boneless chicken thighs or breasts

2 tablespoons butter (for chicken)

3 garlic cloves, minced

1 teaspoon chili flakes or 1 tablespoon chili paste

1 teaspoon paprika

Salt and black pepper to taste

250g rotini pasta

1 cup sweet corn kernels (fresh, canned, or frozen)

1 tablespoon butter (for sauce)

1 cup heavy cream

1 teaspoon Cajun seasoning

¾ cup grated Parmesan cheese

Fresh parsley or green onions, for garnish


Instructions

1. Cut the chicken into bite-sized pieces and pat dry. Season with salt, pepper, and paprika.

2. Boil the rotini pasta in salted water until al dente. Reserve ½ cup of pasta water before draining.

3. In a skillet, melt 2 tablespoons of butter over medium heat. Add garlic and chili flakes or paste. Sauté for 30 seconds until fragrant.

4. Add chicken and cook for 6–8 minutes until golden and cooked through. Remove and set aside.

5. In the same pan, add 1 tablespoon of butter and sauté the corn for 2–3 minutes.

6. Pour in the cream, add Cajun seasoning, and simmer for 3–4 minutes. Stir in the Parmesan cheese until the sauce is smooth.

7. Toss in the cooked pasta, adding pasta water as needed to loosen the sauce.

8. Serve pasta on plates, top with garlic butter chicken, and garnish with chopped parsley or green onions.


Notes

Make sure to pat the chicken dry to get that perfect golden sear.

Use fresh Parmesan for a smoother Alfredo sauce—it melts better than pre-grated cheese.
