1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup unsalted butter, melted
2 large eggs
1/2 cup milk
1/2 cup sour cream
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/2 cups fresh or frozen cherries
1 cup all-purpose flour for streusel topping
1/2 cup brown sugar for streusel topping
1/2 teaspoon cinnamon for streusel topping
1/4 cup melted butter for streusel topping
Instructions
1. Preheat the oven to 375°F and line a muffin pan with paper liners.
2. In a medium bowl, combine the streusel topping ingredients until crumbly, then refrigerate.
3. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
4. In another bowl, whisk melted butter, eggs, milk, sour cream, vanilla extract, and almond extract until smooth.
5. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
6. Fold the cherries carefully into the batter.
7. Fill each muffin cup about three-quarters full with batter.
8. Sprinkle the streusel topping generously over each muffin.
9. Bake for 20 to 25 minutes or until golden brown and a toothpick comes out mostly clean.
10. Allow the muffins to cool for 10 minutes before serving.
Notes
Use room-temperature ingredients for softer and fluffier muffins.
Lightly coat the cherries in flour before folding them into the batter to help prevent sinking.
Chill the streusel topping before baking for crisp buttery crumbs.
