Char Siu Chicken is a Cantonese-inspired dish made with juicy chicken thighs marinated in a sweet, savory, and aromatic sauce. Roasted until beautifully caramelized and slightly charred, this dish offers bold flavors and is perfect served with rice, noodles, or in bao buns.

- 2 pounds boneless, skinless chicken thighs
- 3 tablespoons hoisin sauce
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon Shaoxing wine (or dry sherry)
- 1 tablespoon oyster sauce
- 1 teaspoon Chinese five spice powder
- 3 cloves garlic, minced
- 1 teaspoon sesame oil
- Optional: 2-3 drops red food coloring
Instructions
- In a bowl, whisk together hoisin sauce, soy sauce, honey, Shaoxing wine, oyster sauce, five spice powder, garlic, sesame oil, and food coloring if using.
- Place chicken in a zip-top bag or dish and pour the marinade over it. Coat evenly.
- Seal and refrigerate for at least 4 hours, preferably overnight.
- Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
- Arrange marinated chicken on the rack. Roast for 20 minutes.
- Baste the chicken, flip it, and roast for another 15-20 minutes until edges are caramelized.
- Let rest for 5 minutes before slicing and serving.
