Ingredients
2 chicken breasts
2 tablespoons Cajun seasoning
2 tablespoons olive oil
12 ounces penne pasta
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
3 cloves garlic, minced
1 1/2 cups heavy cream
1/2 cup grated Parmesan cheese
Salt to taste
Black pepper to taste
2 tablespoons chopped fresh parsley
Instructions
1. Season chicken with Cajun seasoning, salt, and pepper.
2. Heat olive oil in a skillet and sear chicken for 6–7 minutes per side. Remove and let rest.
3. Cook penne pasta in salted water until al dente. Drain and set aside.
4. Sauté bell peppers in the same skillet until slightly tender. Add garlic and cook 30 seconds.
5. Lower heat, pour in heavy cream, and stir in Parmesan cheese. Let simmer until slightly thickened.
6. Add cooked pasta to the sauce and toss to coat.
7. Slice the chicken and lay over the pasta. Stir to combine or leave as a garnish.
8. Garnish with fresh parsley and more Parmesan if desired.
9. Serve hot.

Let the chicken rest before slicing to retain juices.
Use freshly grated Parmesan for best texture.
Refrigerate leftovers up to 4 days.
