Ingredients

Scale

  • 12 lasagna noodles (cooked al dente or use oven-ready)
  • 2 ½ cups shredded cooked chicken (rotisserie or boiled)
  • 1 cup Buffalo sauce (adjust for heat preference)
  • 8 oz cream cheese (softened)
  • 1 cup ricotta cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup ranch or blue cheese dressing
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • Fresh parsley (for garnish, optional)

Instructions

  1. Preheat Oven – Set your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the Noodles – If using traditional lasagna noodles, cook them according to package instructions, drain, and set aside. Skip if using oven-ready noodles.
  3. Prepare Buffalo Chicken – In a bowl, mix shredded chicken with Buffalo sauce, cream cheese, and ranch or blue cheese dressing until well combined.
  4. Mix Ricotta Layer – In a separate bowl, combine ricotta cheese, garlic powder, and onion powder for a creamy, flavorful layer.
  5. Assemble the Lasagna:
    • Spread a thin layer of Buffalo sauce at the bottom of the baking dish.
    • Place a layer of lasagna noodles.
    • Spread half of the Buffalo chicken mixture evenly over the noodles.
    • Add a layer of ricotta mixture, followed by a sprinkle of mozzarella and cheddar cheese.
    • Repeat the layers, finishing with a top layer of cheese.
  6. Bake – Cover the dish with foil and bake for 30 minutes. Then, remove foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
  7. Let It Rest – Allow the lasagna to rest for 10 minutes before slicing. Garnish with fresh parsley and an optional drizzle of ranch or blue cheese dressing. Serve warm and enjoy!
