1/2 cup granulated sugar

2 large eggs

2 3/4 cups all-purpose flour

1 1/2 teaspoons ground cinnamon

16 caramel candies cut into pieces

1/4 cup granulated sugar for coating

1 teaspoon cinnamon for coating


Instructions

1. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.

2. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.

4. Gradually mix the dry ingredients into the wet mixture until just combined.

5. Chill the dough for 30 to 60 minutes to improve texture and prevent spreading.

6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

7. Scoop dough, flatten slightly, place caramel in the center, and seal into a ball.

8. Roll each dough ball in cinnamon sugar coating.

9. Place on baking sheet with space between each cookie.

10. Bake for 10–12 minutes until edges are golden and centers are soft.

11. Cool slightly before serving to allow the caramel to set while staying gooey.


Notes

Make sure the caramel is fully sealed inside the dough to prevent leaking.

Chilling the dough is essential for thick, soft cookies.
