2 blood oranges

1 large avocado

Instructions

1. Slice off the top and bottom of the blood oranges, remove peel and pith, then cut into rounds or segments.

3. Wash and dry the arugula or greens thoroughly and place them in a large bowl.

4. Thinly slice the red onion and soak briefly in cold water if a milder flavor is desired.

5. Add the blood oranges, avocado, and red onion over the greens.

6. Sprinkle feta cheese and pistachios evenly across the salad.

7. In a small bowl, whisk olive oil, lemon juice, honey, salt, and pepper.
