Ingredients
2 blood oranges
1 large avocado
3 cups arugula or mixed greens
1/4 small red onion
1/3 cup feta cheese
1/4 cup pistachios
2 tablespoons olive oil
1 tablespoon lemon juice or vinegar
1 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Slice off the top and bottom of the blood oranges, remove peel and pith, then cut into rounds or segments.
2. Cut the avocado in half, remove the pit, and slice into cubes or wedges.
3. Wash and dry the arugula or greens thoroughly and place them in a large bowl.
4. Thinly slice the red onion and soak briefly in cold water if a milder flavor is desired.
5. Add the blood oranges, avocado, and red onion over the greens.
6. Sprinkle feta cheese and pistachios evenly across the salad.
7. In a small bowl, whisk olive oil, lemon juice, honey, salt, and pepper.
8. Drizzle the dressing over the salad just before serving.
9. Toss gently to combine without breaking the avocado.
10. Serve immediately with optional extra toppings.
Notes
Use firm, ripe avocados to maintain clean slices and prevent mushiness.
Always assemble and dress the salad right before serving for the freshest taste.
Adjust the dressing balance to your liking by adding more citrus or honey.
